 15 eggs
 100 g blended cottage cheese
 1 tsp salt
 1 tbsp pepper

  • In a large bowl, whisk the eggs and blended cottage cheese together until smooth and fully combined.
  • Heat a non-stick pan over low to medium heat with a small amount of oil or butter.
  • Pour the egg mixture into the pan.
  • To make them fluffy: Gently stir the eggs with a spatula, folding them over themselves as they cook. This slow, deliberate motion creates light, airy curds rather than a dense scramble. Avoid overmixing.
  • Cook until the eggs are just set but still slightly moist, then remove from heat.
  • Season with salt and pepper to taste. Set aside.
